Harvested in the morning, on the plate in the afternoon. They have been doing this since 2001, from plant to plate. It's in their DNA. The De Kas gardens and the Beemster are the soul of the restaurant and menu. They indicate the seasons and surprise again and again. In the gardens and in the greenhouse they grow approximately 300 varieties of vegetables, herbs and fruit. Harvested at the very last moment, processed in the kitchen as quickly as possible.
