Overview

Japan: Between Snow and the Counter

Winter in Japan offers a rare combination: world-class powder skiing in Hokkaido, centuries-old hospitality traditions in mountain ryokans, and access to Tokyo's most respected culinary counters. This journey connects all three, allowing each experience to unfold at its own pace.

You begin in Niseko, where snow accumulates in extraordinary volume and ski conditions dictate the daily rhythm. Six nights allows time to settle into the mountain, chase powder windows with expert local guides, and experience Hokkaido's distinct food culture. The focus is on terrain quality rather than mileage, with flexibility built around weather rather than fixed plans. Hakone serves as a deliberate pause. Two nights at a traditional ryokan resets the body through hot spring bathing, kaiseki dining, and unstructured rest. This is where the journey shifts from physical intensity to cultural immersion, allowing you to arrive in Tokyo recalibrated and ready for what comes next.

Tokyo closes the journey with depth rather than breadth. Four nights focuses on access: private counter seating at hard-to-book restaurants, neighbourhood-level exploration with specialist guides, and time to absorb the city's precision without rushing. From first descent to final course, the journey is designed to let contrast reveal itself naturally. Powder and ritual. Effort and stillness. Hokkaido's scale and Tokyo's density. Japan in winter, experienced in full.

Signature Moments
I Winter terrain in Niseko

Niseko receives an average of 10 to 15 metres of snow annually. Siberian cold fronts cross the Sea of Japan, collect moisture, then deposit light dry snow across Hokkaido's western ranges: the champagne powder the resort is known for. Your private guide brings decades of local knowledge, navigating between Grand Hirafu, Hanazono, Niseko Village and Annupuri based on wind direction, crowd patterns and where fresh snow settled overnight. Niseko is not about maximising vertical metres. It is about positioning yourself correctly when conditions align, then resting when they do not.

II Ryokan life at Gora Kadan

Set in the former summer villa of the imperial Kan-in-no-miya family, Gora Kadan is one of Japan's most respected ryokans. Bathing in Japan is ritual. Your suite has its own outdoor rotenburo fed by natural hot spring water. Kaiseki dinner is served in your room at the hour you prefer, each course reflecting the season with decades of training visible in every detail. Service is quiet, anticipatory, and refined over generations. Every detail, from the timing of tea to the temperature of your bath, is calibrated through years of practice.

III At the counter in Tokyo

Omakase means "I leave it to you." At the counter, 8 to 12 seats, the chef curates your meal course by course based on the day's market, the season, and your pace through the meal. The chef has spent decades mastering their craft, often training for ten years before being allowed to touch fish. Knife work honed over a lifetime, rice seasoned by feel, fish selected at dawn from Toyosu Market. Each piece of nigiri timed to your pace. The meal unfolds over two hours. Quiet, focused, precise.

Day by Day

The itinerary in full

Arrival Day . Niseko
Into the mountain
Afternoon Private transfer from New Chitose Airport Arrive into New Chitose Airport and transfer privately to Niseko, approximately two hours through Hokkaido's winter landscape. Volcanic peaks, forests weighted with snow, and the distinct quality of light that defines the region. Check in at Higashiyama Niseko Village, A Ritz-Carlton Reserve, at the base of the resort with direct ski-in access.
Evening Settle in The first evening is deliberately unstructured. Explore the property, take an onsen session or a walk through the snow-covered grounds, and allow the body to adjust to altitude and timezone. Dinner at the hotel: Hokkaido seafood, dairy and winter vegetables prepared with restraint. A good introduction to what the region produces.
Overnight: Higashiyama Niseko Village, A Ritz-Carlton Reserve
Niseko mountain view
The drive from New Chitose to Niseko introduces the scale of Hokkaido before you've skied a metre of it. Give the transfer its due.
Days 1 to 5 . Niseko
Terrain, conditions and rhythm
Each Morning The mountain on its own terms The next five days follow the mountain's rhythm rather than a fixed schedule. Niseko is defined by conditions: powder windows, visibility, wind, temperature. Your private guide brings decades of local knowledge, reading terrain and weather patterns to position you for the best snow quality each day. Some mornings begin early to catch first tracks after overnight accumulation. Others start slower, waiting for visibility to lift or allowing rest after consecutive powder days.
On the Mountain Four areas, one guide, daily decisions Niseko operates across four interconnected areas: Grand Hirafu, Hanazono, Niseko Village and Annupuri. Your guide navigates between them based on wind direction, crowd patterns and where fresh snow has settled overnight. Lift-accessed runs, side-country gates and tree skiing are all selected based on your ability and the day's conditions. This is local expertise earned over thousands of days in these mountains.
Evenings Après, ramen and omakase Bar Gyu+ in Hirafu Village is famously hidden behind a small refrigerator door. Find it. Toshiro's offers yakitori, sake and post-ski warmth. Sushi Shin Niseko is worth booking for one refined omakase evening. Late-night ramen at Rakuichi Soba, Hokkaido-style miso with butter and corn, is a ritual after a long day on the slopes.
Rest Days Onsen, the village and doing less Between ski days, Higashiyama's onsen facilities are extensive: indoor and outdoor baths, treatment rooms, deep tissue massage tailored to skiers. Hirafu village rewards a slow morning walk: craft shops, coffee roasters, farmers market. The pace is intentionally slower, allowing the body to absorb consecutive powder days without burning out.
Overnight: Higashiyama Niseko Village, A Ritz-Carlton Reserve (5 nights)
Niseko
Hokkaido receives an average of 10 to 15 metres of snow annually. January delivers the most reliable accumulation. Powder days often mean limited visibility. That's normal, and your guide manages it.
Day Six . Hakone
Transition south
Morning Depart Niseko for Tokyo Depart mid-morning and transfer privately to New Chitose Airport for the flight south to Tokyo. Private car from Tokyo to Hakone, approximately 90 minutes southwest of the city. The drive moves through urban density into forested mountain terrain, with views of Mount Fuji on clear days.
Afternoon Check in at Gora Kadan Check in at Gora Kadan, set in the former summer villa of the imperial Kan-in-no-miya family. Arrival marks a deliberate shift in pace: quieter, slower, more interior. Arrival tea ceremony, room orientation, bathing in your private outdoor rotenburo or the communal onsen.
Evening Kaiseki dinner in your suite Kaiseki dinner served in your room at the hour you prefer. This is not a day for activity. It is a day for allowing Hokkaido to settle and preparing the body for Tokyo's intensity.
Overnight: Gora Kadan
Hakone
Gora Kadan is set in the former summer villa of the imperial family. The hospitality here operates at a level of attentiveness that feels almost intuitive. Service is quiet, anticipatory and refined over generations.
Day Seven . Hakone
Bathing, stillness and seasonal ritual
Morning Breakfast in your room, then the gardens Breakfast is served in your room at the time you specify. The morning is yours: bathing in the outdoor rotenburo, walking the meticulously maintained gardens, resting in your suite. Bathing in Japan is ritual. The outdoor rotenburo is fed by natural hot spring water and is the right place to spend the first hours of the day.
Afternoon Onsen, rest, quiet observation Lunch is light, often served as a bento or simplified kaiseki. The afternoon continues in the same vein: alternating between onsen, rest and quiet. Hakone rewards non-action. The experience is not about seeing or doing but about allowing time to expand.
Evening Multi-course kaiseki dinner Dinner is the day's centrepiece: a multi-course kaiseki meal that reflects the season, the region and the chef's interpretation of balance. Each course arrives with precise timing, and the meal unfolds over two hours. Japanese hospitality at its most refined.
Overnight: Gora Kadan
Gora Kadan bath
Onsen water temperatures range from 38°C to 43°C. Limit soaking to 10 to 15 minutes, exit to cool down, then return. Shower thoroughly before entering. Swimwear is not permitted in traditional onsen.
Day Eight . Tokyo
Arrival into Tokyo
Morning Final breakfast at Gora Kadan, then Tokyo After a final breakfast at Gora Kadan, depart mid-morning for Tokyo. The drive retraces the route through mountain terrain before re-entering urban density. Check in at Aman Tokyo, positioned on the top six floors of the Otemachi Tower with views across the Imperial Palace gardens. The design is spare, vertical, and deliberately calm.
Afternoon Settle in without rush The afternoon is intentionally light: settle into the suite, explore the hotel's spa and pool, perhaps a walk through the nearby East Gardens of the Imperial Palace. The goal is arrival without overwhelm, allowing the shift from mountain stillness to urban energy to happen gradually.
Evening First Tokyo meal A first Tokyo meal, either at the hotel or a neighbourhood izakaya within walking distance.
Overnight: Aman Tokyo
Tokyo blue city lights
Aman Tokyo occupies the top six floors of the Otemachi Tower. The views across the Imperial Palace gardens offer a rare sense of space in a city with almost none of it.
Day Nine . Tokyo
Neighbourhood discovery
All Day Private guide, neighbourhood level Meet your private guide for a day of neighbourhood-level exploration, designed around your interests: architecture, design, food, craft, contemporary art. Tokyo rewards specificity. Rather than covering distance, the focus is on depth within a few select areas. Possibilities include the backstreets of Yanaka for traditional craft shops and small temples; Omotesando and Aoyama for architecture and contemporary design; Tsukiji Outer Market for morning food culture; or Shimokitazawa for independent bookshops and cafes.
Midday Lunch wherever the rhythm lands A standing soba counter, a neighbourhood sushi spot, or a simple kissaten coffee shop. The aim is to let Tokyo register through layered impressions rather than landmark visits.
Evening Early return to Aman Return to Aman Tokyo for rest before tomorrow's counter dining experience. The day before omakase is kept deliberately lighter.
Overnight: Aman Tokyo
Yoba noodles Tokyo
Tokyo rewards specificity. A guide who knows one neighbourhood deeply is worth more than one who covers six. Your guide tailors the route based on energy, weather and curiosity.
Day Ten . Tokyo
At the counter
Day A lighter day before the meal The day is kept light deliberately. Rest at the hotel, a short walk, or further neighbourhood exploration at your own pace. The evening is the day's purpose.
Evening Omakase at a coveted Tokyo counter Reservations are secured in advance at establishments such as Sukiyabashi Jiro Roppongi, Saito or Yoshitake, though the exact venue depends on availability and booking windows which can extend months ahead. Eight to twelve counter seats, direct interaction with the itamae, meals that unfold over two hours. The chef has spent decades mastering their craft, often training for ten years before being allowed to touch fish. Knife work honed over a lifetime, rice seasoned by feel, fish selected at dawn from Toyosu Market. The meal is quiet, focused and precise. Conversation with the chef is welcomed but not required.
Overnight: Aman Tokyo
Chef Tokyo
Do not wear perfume, cologne or scented products on the day of your reservation. Some establishments will refuse service if fragrance is detected. It interferes with the chef's ability to assess fish freshness. This is not an exaggeration.
Day Eleven . Tokyo
Open day for depth or rest
All Day Follow energy and curiosity A full day with no fixed structure. Options include a return visit to a neighbourhood that resonated; deeper exploration of a specific interest such as ceramics, textiles, knife makers or tea culture; a private museum visit arranged outside public hours; or rest and recovery at Aman Tokyo. Alternatively, a second counter dining experience can be arranged if availability allows, or the day can be spent exploring Tokyo's depachika (department store food halls), artisan coffee culture or late-night izakaya traditions. After eleven days of structured travel, this day allows you to follow energy and curiosity without obligation.
Overnight: Aman Tokyo
Tokyo winter day
A second counter reservation (Den, Narisawa or Kohaku) requires a booking window of two to six months. If this is something you want, confirm it at the time of booking the journey, not on arrival.
Departure Day . Tokyo
Tokyo to Narita or Haneda
Morning Final breakfast at Aman Tokyo Breakfast at Aman Tokyo with the Imperial Palace gardens below. Your private driver will meet you for departure transfer to Narita International Airport or Haneda Airport, depending on your flight routing. Transfer time is approximately 60 to 90 minutes depending on airport and traffic conditions.
Tokyo city lights
Haneda is closer to central Tokyo and more convenient for early morning flights. Narita suits most long-haul connections. Your travel designer confirms the right airport based on your routing.

Counter dining reservations are subject to availability and booking windows.

Before You Book

Counter dining reservations

Tokyo's most respected sushi and kaiseki counters require reservations two to six months in advance, with some accepting bookings only through hotel concierge or established relationships. Availability cannot be guaranteed. Alternative venues of comparable quality will be secured if first-choice restaurants are fully committed. Confirm your counter preference at the time of booking the journey.

Best time to travel

January is the strongest month: peak powder, full terrain access and Tokyo's winter kaiseki menus at their most refined. February extends the powder season through mid-month, though Chinese New Year creates peak demand and significantly higher pricing. Late November and early December offer lighter crowds and lower pricing but snowpack is not guaranteed. Plan accordingly or target shoulder periods for better value.

Skiing ability

Moderate to advanced skiing ability is recommended for Niseko's terrain and side-country access. The itinerary includes significant physical activity followed by periods of stillness and cultural immersion. Travellers should be comfortable with contrasts in pace and intensity. Powder days often mean limited visibility. Your guide manages this, and trust in that guidance is part of the experience.

Cultural protocol

Japan maintains specific customs around bathing, dining and hospitality. Briefings are provided throughout the journey and guides assist with cultural navigation throughout. The most important practical note for counter dining: do not wear perfume, cologne or scented products on the day of your reservation. Some restaurants will refuse service if fragrance is detected. This is not a suggestion.
